As I get older, I have come to realize that I really can't eat the things I used to. Spicy foods, even for a Cajun, just don't sit well with me anymore.
Working in a restaurant doesn't help at all, but I need to lose weight and I am determined to do just that. I don't get a lot of exercise but I managed
to lose 15lbs. in 3 months. The way I see it, I have eaten just about anything I wanted for a long time, so now it's time to bite the bullet.
Of course my wife is helping by cooking healthy meals, but it is really difficult. It gets old eating fish, chicken, and salads or baked potatoes, but if we
want to live longer and enjoy our latter years, ( I am older than my wife) we must eat right, and exercise. My wife and our dog walk everyday, but my knee
hurts to much for me to walk even a little, after standing for 6 hours, so until I retire which is just a few days away, I will have to just learn to deal with the pain.
So as I wind down my working career, I am still trying to think of what it is I want to do with all my free time.
I will miss all of my co-workers, as I enjoyed working in a very nice restaurant, WOW it's almost been 10 years since I started.
PS I will continue to up date this web site and hopefully think of some things to write here.

WOW !!!!!! What a wet Spring we've had this year.............
Almost thought I was actually back in Louisiana with all the wet stuff. The rain sure does keep the lawns greener and growing quickly.
The ground in some areas are filled with over run from local creeks.
Lots of things going on at Dusters including, Cruise Nights every month, followed by beer dinners on Fridays, click on the beer dinner link to check out the menu.
Adam has been tweaking his "home style" cookin', We do make, or plan to make our own Salsa, BBQ sauce, porkstrami with more to come soon.
So take it from me....It's all good, give us a try Today!!

After being in Nebraska for almost 10 years I can't get used to Spring coming so late. In Louisiana Spring sometimes starts in January.
Some of the trees in the bayou country don't lose their leaves in winter.
With Spring coming in, everyone is rushing off to clean up flower beds and doing "Spring cleaning" .
The mowing season is going to be in full swing in a week or so.
And so it begins, the task that no one wants to do but in the end, all the lawns look great.

You know Spring is getting nearer in Nebraska when the geese start flying to the North and the wind starts blowing in mid March.
As I travel into Columbus everyday I am reminded of Spring in Louisiana, the ditches are swollen from rainfall or melting snow.
Water in the ditches in La., means only one thing, crawfish!!! Cher. All along the hi-ways in South La. there are crawfish to be caught, I wonder if travelers along
hi-way 30 would do a double take if they witnessed one crazy Cajun fishing in the ditches for his beloved "mud bugs".
People here use them for bait, but oh man what a Cajun can do wit em is down right dandy, and tasty too.
So next time you are in a clear creek and you see the little critters scurrying around, call me and I'll make a meal wit em, I Garontee!!
